There is nothing more luxurious for breakfast than poached eggs. Sometimes, eggs get a bad reputation but like all things, they are great for you in moderation. Lay them over a bed of wilted garlic spinach and a sprinkle of feta cheese for an extra rich but still light breakfast or lunch.
1 egg, poached
1 pat of butter
1 generous handful of spinach
1 garlic clove, minced
1½ Tbsp. crumbled feta cheese
1 Tbsp. chopped chives
- Melt the pat of butter in a sauce pan over medium. Once melted, add the garlic and cook until fragrant, about 30 seconds.
- Add the spinach. Stir to coat with butter and garlic and allow to wilt, about 1 minute. Remove and place on a place.
- Top with a poached egg. Layer on feta and chives.
