Poached eggs with feta and chives

There is nothing more luxurious for breakfast than poached eggs. Sometimes, eggs get a bad reputation but like all things, they are great for you in moderation. Lay them over a bed of wilted garlic spinach and a sprinkle of feta cheese for an extra rich but still light breakfast or lunch.
  • 1 egg, poached
  • 1 pat of butter
  • 1 generous handful of spinach
  • 1 garlic clove, minced
  • 1½ Tbsp. crumbled feta cheese
  • 1 Tbsp. chopped chives
    1. Melt the pat of butter in a sauce pan over medium. Once melted, add the garlic and cook until fragrant, about 30 seconds.
    2. Add the spinach. Stir to coat with butter and garlic and allow to wilt, about 1 minute. Remove and place on a place.
    3. Top with a poached egg. Layer on feta and chives.​
