Baking with alternative flours can be a fun experiment in food. Oat flour particularly lends a new taste - a sweetness and a nuttiness. We had to do up some oat flour pancakes, creating a breakfast twist like no other. We also upped the ante a little by tossing a few toffee chips in, just for fun.

Ingredients
In a large bowl, combine flour, sugar, baking powder and salt. In another bowl, whisk together milk, buttermilk, oil and eggs. Pour the wet ingredients into the center of the dry ingredients and whisk until just combined. Heat a skillet over medium high and spray with non-stick spray. Pour approximately 1/3 cup mixture out for each pancake. Top with toffee chips and chocolate chips. When the pancake begins to bubble, flip and cook until light golden brown on the other side.
Tip: To keep pancakes warm while they cook, place them on a plate in a 200 degree oven.
